  • Premium whole almonds – 1 kg
  • Ghee – 150gm
Chaat Seasoning
  • Mint powder (dehydrated pudina) – 50gm
  • Chaat masala – 40gm
  • Dry mango (amchur) powder – 35 gm
  • Black salt – 50gm
  • Fine Himalayan salt – 25 gm
  • Roasted cumin powder – 40gm
  • Coriander powder – 35 gm
  • Kashmiri chilli powder – 25gm
  • Guntur chilli powder – 20gm
  • Garlic powder – 25 gm
  • Onion powder – 25 gm
  • Dry tamarind powder – 25 gm
  • Fennel powder (lightly roasted) – 25 gm
  • Dry ginger powder – 20gm
  • White pepper powder – 20gm
  • Black pepper powder – 20gm
  • Jaggery powder – 25 gm
  • Malto powder – 6 gm
Preparation
Roast the Almonds
  1. Roast the almonds at 145°C for 16–18 minutes, stirring halfway. Toss them in ghee and cool them .
Prepare the Seasoning
  1. Mix all the dry spices thoroughly to ensure even distribution.
Coat the Almonds
  1. Toss the warm almonds with the oil until lightly coated. Gradually add the seasoning mix and malto while continuously tossing so every almond is evenly covered.
Finish
  1. Toss them in mint powder and serve.
