Salted Caramel & Cardamom Almonds

Roasted California Almonds in a rich salted caramel, infused with green cardamom and finished with toasted sesame - sweet, salty, and crunchy in equal measure.

Ingredients
  • Whole almonds – 1 kg
  • Unsalted butter – 100gm
  • Ghee – 100gm
  • Brown sugar – 90 gm
  • Fine caster sugar – 150gm
  • Fresh cream – 120 gm
  • Liquid glucose – 15 gm
  • Fine sea salt – 8 gm
  • Green cardamom powder (freshly ground) – 6 gm
  • Vanilla extract – 3 gm
  • Maltodextrin – 10 gm
  • Fine icing sugar – 5 gm
  • Sesame seed – 120 gm
Preparation
Roast the Almonds
  1. Roast at 145°C for 18–20 minutes and toss them in ghee.
  2. Keep them warm.
Prepare the Salted Caramel
  1. Melt the sugars over medium heat until amber.
  2. Add butter and whisk.
  3. Add warm cream slowly.
  4. Stir in glucose.
  5. Cook to 108–110°C.
  6. Add vanilla and sea salt.
  7. Remove from heat and cool slightly.
Coat
  1. Pour the warm caramel over the warm almonds.
  2. Toss continuously for even coating.
Finish
  1. Sprinkle the green cardamom powder while tossing.
  2. Please dust with maltodextrin, and a little icing sugar for a dry, premium finish.
  3. Roll them with toasted sesame.
  4. Spread on parchment and cool completely.
  5. Enjoy.
